Ingredients:

  • 1.5 cups (300 ml) granulated sugar
  • 2 cups (400 ml) yogurt
  • 1 cup (200 ml) oil
  • 1 cup (200 ml) coconut flour
  • 1 cup (200 ml) semolina
  • 1 cup (200 ml) all-purpose flour
  • 1 packet (12 g) baking powder
  • About 200 g of fruit jam or fruit spread of your choice

Preparation:

  1. In a large bowl, combine the granulated sugar and yogurt, and mix with a spoon or spatula.
  2. Add the oil, coconut flour, semolina, sifted all-purpose flour with baking powder, and each time you add an ingredient, briefly mix the mixture to make it smooth and uniform.
  3. Prepare a baking dish measuring 30×20 cm by greasing it with margarine and lining it with parchment paper.
  4. Pour half of the prepared batter into the baking dish. Spread the fruit jam or fruit spread of your choice over the batter.
  5. Place one tablespoon of the batter over the fruit jam. Then lightly drag a knife to cover the fruit jam and evenly distribute the batter.
  6. Bake in a preheated oven at 200 degrees Celsius for 35-40 minutes. Check with a toothpick; if it comes out dry, the cake is done.
  7. While still hot, sprinkle the cake with coconut flour and coconut sugar, or decorate as desired.
  8. Once cooled, slice the cake into pieces and serve.
